Peach Salsa

Basic Peach Salsa

2 ripe, but firm medium peaches
1 tablespoon vegetable oil
1 tablespoon fresh lime juice
1/4 cup finely chopped onion
1/2 cup diced red and/or green bell pepper
1 tablespoon chopped cilantro (THIS IS A KEY INGREDIENT!)
1 chopped hot pepper...we've used medium hot fresh peppers or canned jalapeƱos. You can vary this to get the level of hotness you like.
1/2 teaspoon salt
fresh ground black pepper to taste

yummy.

Not vegetable oil. Use balsamic vinegar. And a half cup of sugar. And a splash of green tabasco.

That jasmine-she's a cooking fiend.

Not to brag or anything, but I happen to make a tasty manwich sloppy joe.

I've heard lots of good things about robb's peach salsa so I'm glad I didn't have to beg for the recipe! Now it's all mine! ( insert evil laugh here!)

Thanks!!! I'd say I can't wait for peach season but that would mean summer is almost over. I don't want to rush things =)

Yum.
And you know what rocks?

Peach (or Pineapple) Salsa spread on top of fresh salmon filets and baked in the oven (or pan fried).

Yum.

Mouth-gasm.
